CAJUN SEASONING For Blackened Chicken, Fish or SteakBrush Chicken, Fish or Steak lightly with oil. Place the steak on to a clean plate and sprinkle a packet of Elfreds Cajun Seasoning over it. Turn over and repeat on the other side. Cook as you would normally cook your steak, chicken or fish on a hot flat griddle or a thick frying pan.
Use as little oil as possible. Just enough to prevent the food from sticking. If you use too much oil it removes the seasoning. An Oil Spray is perfect.
